Happy Monday my peeps! How are you? How was your weekend? We had an awesome weekend but as always, it went by way too fast. Seems there is never enough hours in the day to get everything done that I want to do and the 2 days for a weekend just is not enough time. ACK! It has been pouring down rain here all night and tons of lightning, etc. and it's still raining which made it very hard to get out of bed today. I am looking forward to going back to sleep on the bus this morning. LOL! Of course, along with the rain, came the cool temps again - it's going to be 56 degrees today - UGH! I really enjoyed our 70 degree temps and beautiful sunshine on Saturday. Summer, where are you?! *sigh*
Anyway, my good friend, Steven, over at No Excuse, No Explanation, asked me last week to post my Hashbrown Casserole recipe and I've just now gotten the chance to do so. I hope you enjoy it. This is a staple at our house - mainly at the holidays - Thanksgiving and Christmas - but is great any time of year.
HASHBROWN CASSEROLE
1 Bag (32 oz) Frozen Hasbrowns (I prefer the little chopped square ones)
1 Stick Butter Melted
1 Can Cream of Mushroom Soup
12 oz. Grated American Cheese (I use Velveeta)
1 8 oz. Sour Crea
1 Tsp. Salt
1/2 Small Onion Chopped
2 Cups Crushed Cornflakes
1 Stick Butter Melted (This is not a typo)
DIRECTIONS:
Spread thawed hashbrowns in 9x13 glass baking dish.
Mix the first 6 ingredients in a large bowl and pour over hasbrown potatoes.
Pour cornflakes on top and spread out evenly on top.
Pour last stick of melted butter on top of cornflakes.
Cook on 350 degrees for 45 minutes.
That's all there is to it - easy peasy! Let me know if you decide to try it out and how you and your family like it. Our family loves it and could eat it year around!
