Happy Sunday!

Just wanted to let you know I was still around - but I am a baking machine today and here are just a couple of things I've been cooking all.day.long: (Recipes at end of post)

Ultimate Chocolate Chip Cookies

Easy Peasy Peanut Butter Cookies


Ultimate Chocolate Chip Cookies

Ingredients:
3/4 cup Crisco® Butter Shortening  or 3/4 stick Crisco® Butter Shortening Sticks
1 1/4 cups firmly packed light brown sugar
2 tablespoons milk
1 tablespoon vanilla extract
1 large egg
1 3/4 cups Pillsbury BEST® All Purpose Flour
1 teaspoon salt
3/4 teaspoon baking soda
1 (6 oz.) package semi-sweet chocolate chips (1 cup)
1 cup coarsely chopped pecans (optional)

Directions:
1.HEAT oven to 375ºF.


2.COMBINE shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Combine flour, salt and baking soda. (I mix these 3 ingredients in separate bowl completely) Mix into shortening mixture until just blended. Stir in chocolate chips and nuts.

3.DROP by rounded measuring tablespoonfuls 3 inches apart onto ungreased baking sheet. (I only use cooking stones for my cookies - they just taste so much better)

4.BAKE 8 to 10 minutes for chewy cookies, or 11 to 13 minutes for crisp cookies. Cool 2 minutes on baking sheet on a cooling rack. Remove cookies to rack to cool completely.

 (TIP* If nuts are omitted, add an additional 1/2 cup semi-sweet chocolate chips)


Peanut Butter Cookies:
1 Cup Peanut Butter
1 Cup Sugar
1 Egg


Directions:
1.  Heat oven to 375ºF.


2. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork.

3. Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.

There you go - hope you enjoy them.  And no, I did NOT leave out any ingredients on the Peanut Butter cookies - that is why I call them my "easy peasy" peanut butter cookies! :o)

Hope you are all having a wonderful and glorious Sunday afternoon.  We got about 6 inches of snow yesterday and overnight - thankfully, nothing more in our area. :o)  Well, back to being a slave over the oven, I go.

    I think I could handle the pb cookies...three ingredients! Awesome!

  4. Yummy! those look great. I read the recipe twice and then went back and reread your last recipe to see where the flour and stuff was. Next time I will continue reading to find out. That just seems too easy!

  6. I could almost smell and taste these just from the picture. I'm beginning to have a little bit of motivation to start baking....If I wait long enough maybe it will pass.
