Weekend Recap

How was your weekend my friends?  Good, I hope.  How was your weather?  Were you able to stay warm or did you freeze like we did?  It was SOO COLD here that it was ridiculous.  We stayed in hibernation as much as possible.  We didn't get a lot accomplished really, but just trying to stay warm and hung out as a family.  It was so nice to just relax for a change.  We tried planning a trip for Spring Break with the kids and we tried finalizing our trip to Florida in August for my mom's 60th birthday, but we didn't get too far.  I did some running and walking on the treadmill and walked/ran 3.5 miles on Saturday - most I've ever walked at one time, so I was happy. :o)
Also, I am in two different Valentine Swaps through the bloggy world and I went shopping on Saturday and bought the 2 girls that I have, their stuff.  I hope that they like what they are getting.  I will show you the packages all wrapped up, but not the actual gift until after they get them so that the surprises aren't ruined.   I also handmade them each a Valentine's day card to go along with their packages. 
Sooo.....girls - your packages are on their way to you as of today - please let me know when you have received them safe and sound and I really hope you enjoy what I picked out for you.

On another note - I have a recipe that I tried out for the first time today and me and the family all LOVED it! It was SO GOOD and if there is one thing you should know about me, it's that I do NOT like Cauliflower at all - but this was really really yummy!  This is a recipe from the website of Sheila who is the owner of the Sugar Free Sheila domain. She is a lady who has been on the Atkins diet for over 8 years now (I think it's 8 1/2 to be exact) and she has been at her goal weight for at least 6 or 7 of those years and continues to eat this way daily.  She is my height and was my weight that I began at on January 4th and she is now a size 0-2 and weighs around 110 lbs.  She is such a sweet person whom I've had the opportunity to chat with quite a few times over the last year or so and she is very helpful in any way she can be.  You can read and learn all about her on her website - so be sure and check it out - she has it packed full of great information! Anyway, she has a few "free" recipes on her website and this Cauliflower recipe is one of them.  Let me know if you try it and what you think about it:
Well, that's all the news I have for today - not much more to tell really - like I said it was a quiet, relaxing and cold weekend where we didn't do much of anything but try to stay warm.  I am really tired of these 11 and 12 degree days!   Is it Spring yet? *sigh*

  2. I have heard mashed cauliflower is really good! Glad you had a nice weekend, my night out with Mickey was pretty fun. But it is amazing how one night away from the norm can wear you out!
