What's Hap-pinning Wednesday

Happy Hump Day guys and dolls.  You remember what today is, right?! Yep, you guessed it - it's What's Hap-pining Wednesday where you join me in playing along with Jessi and Jenn in their weekly link up party.  


I only have one thing on my mind this week and it is this:

 
 

Yep, I may have ordered that t-shirt there on the bottom last night as soon as our beloved Cubbies clinched the win and were headed to the NLCS for a shot at the World Series.  My husband and his family have been a Cubs fan since they were born.  I've always been a huge baseball fan, but for the past 18 years I have adopted the Cubs as my team - win or lose, I still love them dearly.  They deserve to win and this is our year - I totally believe that.  It's been since 2003 since we've won a division series, until last night, and it's been since 1945 since we won a World Series, but over a 100 years since we've been to a World Series - so when that shirt says, "Chicago Wants It More" - that's simply stating the facts my friends! :)

Hey, It's Okay Tuesday

Happy Tuesday guys and dolls!! Hope you've been having an awesome week so far - yes, I know, it is only Tuesday already, but hey - at least it is Tuesday and you know what that means right?!  :)



1.  To be happy to have had the day off yesterday for Columbus Day, thanks to working for a bank and getting bank paid holidays - woo hoo

2.  To be happy that this is only a 3 day work week for me

3.  To be sad that we have a memorial service to go to in Illinois this Saturday, but to be SUPER HAPPY that we are going to get to enjoy some COLD temperatures while there - I'm SO over this Texas heat  

4.  To be dreading the long drive this weekend there and back - 13 hours one way to be exact - blah

5.  To be THRILLED that our Cubs won against the Cardinals again last night - on to game 4 tonight, baby

Weekend Recap

Happy Happy Monday peeps!  I hope you had an awesome weekend.  Mine has been pretty great, other than my Hogs losing to Alabama, though it was expected. I am actually "still" on my weekend, since working at a bank I am getting the day off thanks to Columbus Day - whoop whoop!!! I got a lot done over the weekend and may just relax and lay in bed today catching up on my DVR shows because it will be just me and my dogs again today. :)

Speaking of my dogs - have I shown you my babies lately?

Aren't they cute?  They always bring a smile to my face and I can't help but love them.  They are such sweet sweet babies.  :)  Other than that, I finished decorating the outside of our house for Halloween, watched the Cubbies stomp the Cardinals and hung out with the neighbors and enjoyed some cold adult beverages.

Friday Faves

Happy Happy Friday guys and dolls and Happy THREE DAY WEEKEND - can I get a WHOOP WHOOP!!!???  I do hope that you are all getting to celebrate that with me - I've been waiting for this day since last month when I had the first one - HA!  Today is the link up party Friday Faves and you know the drill, so come play along, won't you?!  


Here are some of my faves happening at the moment:

(1) Chicago Cubs won the Wild Card game against the Pirates two nights ago.  


Ya'll, this.is.HUGE!! We've not won a Wild Card game in 12 years and haven't won a World Series in over a 100 years! And Arietta is an AWESOME pitcher, but of course it doesn't hurt that he has an awesome group of teammates backing him up and being there to help make the plays in the pinch. Now today we start the Best of 5 against the St. Louis Cardinals on our way to win a spot in the World Series - this is our year - I just know it! :)

(2) Houston Astros - they won their first game of their series last night against the Kansas City Royals on their way to a push for the World Series Spot as well.


(3) My Razorbacks, of course!  We are playing Alabama tomorrow and I know it's going to be a hard fought game.  We may win and we may not - we have beat them before, but it's going to depend on who shows up to play this week on what the outcome will be.  But, I am a die hard, life long fan and will never yield and will always be rooting on my Hogs, win or lose! :)  WPS!!!


(4) This Mug - my Yeti.  



Do you have one of these? OMG they are absolutely THE BEST MUG EVER invented!  When I tell you that I've had ice in it for over 12 hours straight, sitting in a HOT car in Texas heat, I am being dead serious!  I was completely shocked and amazed to be honest!  And for coffee lovers out there - trust me when I say - it keeps your coffee HOT for over 5 or 6 hours and for a while I even have to take the lid off just to let it cool down a wee bit so that I can actually drink it - it keeps it that insulated.  Also, the top I absolute LOVE because it's a tempered plastic and your lips aren't touching the stainless steel of the mug when you go to drink.  It is completely on the lid and very comfortable - it may not be a big deal to some of you, but it's a HUGE deal to me - I absolutely despise having my lips touch stainless steel when drinking it.  And yes, the $30-$40 price tag is absolutely worth every penny.  Run and get one - I promise you won't be disappointed - it is truly everything they claim it is. They come in different sizes - I think this 20 oz, a 30 oz and I know there's also a beer huggie one too. :)

(5) And last but not least:

This is SO me every Friday, but the fact that there is a 3 day weekend involved, makes the day even sweeter!! LOL

Pumpkin Pie Squares (Paleo, AIP, Grain Free, Dairy Free)

Happy Thursday lovies, how are you doing today? Awesome, I hope!  I thought I would give you an awesome Pumpkin recipe that I came across and can't wait to try out myself. Tis the season for all things Pumpkin right?! :)  You can find all of the deets here.
Pumpkin Pie Squares
For the crust:
¼ c coconut flour
1 tbsp. arrowroot flour
pinch of salt
¼ c coconut oil, melted
1 tbsp. maple syrup or honey
2 tbsp. water
1 tsp alcohol-free vanilla extract
For the pumpkin layer
2 c pumpkin purée
¼ c maple syrup or honey
¼ c coconut oil, melted
pinch of salt
1½ tsp cinnamon
1 tsp ginger
¼ tsp cloves
2 tbsp. coconut flour
2 tsp arrowroot flour
Instructions
  • Combine coconut flour, arrowroot flour, and a pinch of salt in a bowl. Make a well in the center.
  • Add the melted coconut oil, maple syrup or honey, water, and vanilla into the well.
  • Stir until thickened. Press into an 8x8 pan.
  • Bake at 325 for 15-20 minutes until golden on the edges.
  • Remove from the oven and cool.
  • While the crust is cooling, prepare the pumpkin layer.
  • Combine all ingredients and process until smooth.
  • Pour over the cooled crust and place in the refrigerator to chill for several hours or overnight.
  • Cut into squares and serve with whipped coconut topping, if you fancy that!
